Malabi is a Middle Eastern milk pudding.It's easy and one can quickly prepare this dessert with many variations.As I paired it with fresh strawberry coulis.

you can use frozen strawberries in this recipe .Sugar used in preparing strawberry depends on the sweetness of fruit,if strawberries are not enough sweet you can add more sugar.

  • 1. Steps for preparing malabi:-
  • 2. Reserve 1 cup of milk from 1 1/2 cup and add rest(1/2 cup) of the milk to heavy bottom pan with sugar.
  • 3. Place pan on medium heat,stir constantly until sugar is full dissolved.
  • 4. In another bowl add 1 cup reserved milk and stir in cornflour.
  • 5. Stir well until cornflour has dissolved,batter should be smooth and lump free.
  • 6. As soon as milk comes to boil,lower the heat and add in the cornflour mix and rose water.(Before adding cornflour stir it well once again)
  • 7. After adding cornflour mixture stir continuously for 5 minutes (use whisk to stir the milk)or until mixture is thick and smooth.
  • 8. Turn off the gas and let the mixture cool at room temperature for 10-15 minutes.
  • 9. Pour the mixture into wine glasses or in any serving bowls.
  • 10. Cover with cling wrap and place in fridge for 4-5 hours. Mixture should set like a jelly.
  • 11. Until mixture sets let's prepare strawberry coulis.
  • 12. Steps for preparing strawberry coulis:-
  • 13. Wash,hulled and thickly sliced the strawberries.
  • 14. In a pan, add sliced strawberries, sugar and fresh lemon juice.
  • 15. Place over medium heat and bring the mixture to a boil, stirring occasionally.
  • 16. When strawberries start releasing juice,lower the flame and allow to simmer for 20 minutes stir occasionally or until sauce is thickened.
  • 17. Remove from heat and cool to room temperature.
  • 18. When mixture turns slightly cool,puree the mixture until smooth.
  • 19. Strain the mixture using strainer.Smooth and delicious strawberry coulis is ready to serve.
  • 20. Garnish the malabi by pouring some strawberry coulis and pistachios.
  • 21. Serve chilled delicious malabi with strawberry coulis.
