Methods
  • 1. Wash rice for 3-4 times,soak washed rice in water for 30 minutes.
  • 2. After 30 minutes strain the rice with strainer to remove excess water.
  • 3. Add rice in the mixer grinder and make a rough, grainy paste and keep aside.
  • 4. In a deep heavy bottom pan add milk and bring to boil.
  • 5. Take 2 tbsp from hot milk,soak saffron strand,stir well and keep aside.
  • 6. When milk comes to boil reduce the flame,add rice and allow it to cook on low flame.
  • 7. Stir in between so that lumps are not formed and milk does not stick to the bottom.
  • 8. Cook till the milk is reduced to half and the rice is completely cooked.
  • 9. Add sugar (am using brown sugar you can use regular sugar also)and cook for another 5-7 minutes. Keep stirring continuously or your phirni will stick to the bottom.
  • 10. Add crushed elaichi and saffron dissolved milk to phirni and stir well.
  • 11. Cook phirni for 5-6 minutes or until it thickness.Turn off the flame and add rose water to phirni.
  • 12. Add the finely chopped pistachios. Reserve a little for garnishing.
  • 13. Pour phirni into serving bowls garnished with chopped pistachios and saffron strands,allow it to cool down on kitchen counter.
  • 14. You should refrigerate it for a few hours before serving and serve chilled.
