Recipe Notes

Since it an eggless, no churn ice-cream; whipping cream is folded in. whipped cream adds fluffiness to the eggless mango ice-cream and gives the mixture a lot of volume because of the fat content it contains. It also adds some sweetness to it and makes the ice-cream light! The lid of icecream box should always be tightly shut, as this avoids crystals from forming.

Methods
  • 1. Mix the custard in 1/4 cup of the milk and keep aside. Heat the rest of the milk and sugar together. Let the sugar dissolve and mixture come to a boil.
  • 2. When it boils, add the custard mixture and bring to a boil again, simmer for half a minute shut the heat and cool to room temperature. Add mango pulp ,mango jam ,half of mango pieces, cream and vanilla. Mix well in blender and transfer on to a container with a tight lid.
  • 3. Freeze till almost set, take out and whip up with a hand beater and place back into the freezer. The lid should always be tightly shut, as this avoids crystals from forming.
  • 4. Whip once more, now set in ring molds and keep in freezer to set again. When completely set, unmoud rings shaped mango –ice-cream.
  • 5. Garnish with chopped mangoes and chopped nuts.Serve immediately Suchmuch mango icecream .
