BAKED SHAHI PHIRNI RECIPE

PHIRNI is a traditional scrumptious dessert made with ground rice , milkmaid , milk , cardamom and lots of dar fruits ...... To make this creamy and delicious pudding , milk is simmered and thickened with ground rice paste and also flavoured with green cardamom powder . But here is presenting my little twist before serving to bake this dessert and it's taste is just heaven......

If your rice is still moist it's just fine and perfect and do not grind fine flour .

Ingredients For BAKED SHAHI PHIRNI RECIPE

Methods
  • 1. Soak and clean the rice for 5 minutes then spread in the colander and air dry them. When it will dry grind it and make a slightly coarse powder .
  • 2. Meanwhile pour the milk into a large heavy bottom pan and begin to heat stirring often so a layer of cream does not form on top .
  • 3. Once the milk becomes hot and boiled little bit of thickened add the rice powder. And constantly stir it otherwise it turns to lumps .
  • 4. Keep stirring and cook on a medium flame until the rice is fully cooked. Phirni also turns slightly thick at this stage .
  • 5. Add the milkmaid and khoya mix well. Now crush the saffron in your palm and add it .
  • 6. Once the phirni has become thick , yet of pouring consistency , add cardamom powder and kewra essence and mix well .
  • 7. This time add dry fruits and mix well. Now pour the hot phirni into earthen pot grease the ghee and pour the phirni into it .
  • 8. Top with dry fruits and little bit of ghee and drizzle with milkmaid and pre - heat the microwave grill it 7-8 minutes when change it's color , cool it in refrigerator for 30 minutes .
  • 9. Serve chilled and Enjoy
