Do chill the Cole slaw.it helps to maintain the crispness of the cabbage. Thus a nice bite is added to the salad. The home made mayo is very simple to make.I made an eggless version by making an emultion ofmilk,lemon juice and mustard with a stream of extra virgin olive oil pouring in till the desired consistency is reached.Seasoned it with a bit of honey, rock salt and pepper. Once the mayo, coleslaw and other elements are ready keep them at rest and combine only when it is time to serve.

  • 1. Soak the black eyed beans for . 3-4 hours and boil to Al dente perfection. Drain them well and let them rest awhile.
  • 2. Prepare the Coleslaw by tossing together The strips of red cabbage and green cabbage with a dressing of lemon juice to salt, pepper and home made mayonnaise tossed together,
  • 3. Toss together the black eyed beans, garlic greens, cucumber , tomatoes and pomegranate pearls along with minced garlic
  • 4. Add in the chilled Cole slaw and mix with a light hand. Top with some crumbled feta cheese and serve.
