Methods
  • 1. Take a heavy bottom pan and pour in the milk.
  • 2. Let it boil on medium low flame.
  • 3. Layers of malai will form on the top, with the help of a spatula keep collecting them to the sides.
  • 4. When the milk turns half in quantity, add in the saffron, and repeat the process of collecting the malai, and also keep stirring occasionally so that the milk does not get burn.
  • 5. Now when the milk reduces to 1/3 in quantity, pour in the sugar and mix in the collected malai back in the milk, and let it simmer on a low flame, until it reduces to 1/4 in quantity.
  • 6. Rabdi is ready, garnish with chopped dry fruits and dried rose petals.
