Koraishutir Kochuri Recipe

Koraishutir kochuri is a winter special dish from Bengali cuisine, where a spicy filling of fresh green peas is filled inside the dough before rolling them into deep-fried flatbreads known as kochuri or kachoris. It can be paired with Aloor dum or Cholar dal.

Ingredients For Koraishutir Kochuri Recipe

Methods
  • 1. Knead the dough using maida, salt, ghee and water. The Dough should be soft.
  • 2. Grind peas in a mixer jar with ginger and green chili.
  • 3. Heat mustard oil in a pan and temper it with crushed coriander seeds and cumin seeds.
  • 4. Add the ground peas, chili ginger paste, stir it well with some salt, red chili powder and garam masala powder.
  • 5. Cook the mixture till it becomes dry and a nice aroma comes.
  • 6. Allow it to cool down completely before stuffing them in kachoris.
  • 7. Make small balls from the dough and fill stuffing in it.
  • 8. Now seal the edges and flatten it from your hand into a flat disc.
  • 9. Dust some flour and roll out like poori.
  • 10. Deep fry these kachori in hot oil, press lightly to puffed up.
  • 11. Remove from oil and put on paper towels.
  • 12. Serve hot koraishutir Kochuri or peas kachori with cholar dal.
