Nolen Gurer Payesh ( Bengali style rice pudding with jaggery) Recipe

Payesh is meant be auspicious in Bengali culture, from annaprashan to wedding ceremonies. However apart from being auspicious it has great taste and flavours for which Bengalis can have payesh even without any such occasions. This recipe of Nolen Gurer Payesh is one among those quintessential favourites of the Bengalis during winter season without which we can't even imagine a perfect winter season. It has just 3 ingredients but it creates wonders in your tastebuds once you grab it.

Ingredients For Nolen Gurer Payesh ( Bengali style rice pudding with jaggery) Recipe

Methods
  • 1. Take a large heavy bottom aluminum sauce pan. Add total amount of milk to it and let the milk boil. Make sure you keep on stirring on low heat. Let the milk simmer and let it get reduced a little forming malai on topp
  • 2. Meanwhile wash the gobindobhog rice well and strain it and keep. Now add the rice to the milk. Keep on stirring it on low heat untill the rice gets good boil and cooked.
  • 3. Once you find the rice is cooked from inside add the jaggery breaking into pieces into the milk and rice. But make you dont over cook it. Now keep on stirring constantly till the jaggery gets mixed with the milk and rice forming a great flavours and perfect texture.
  • 4. Now once the colour gets slightly brownish and the entire thing comes to boil forming big bubbles switch off the flame as it's done. If required you can add more jaggery according to your choice.
  • 5. Come let it rest and cool down for a while. You can take it out in different bowl and keep for serving later.
