This is my innovative dish. I made badam kheer and bordered it with grassy coconut pistachio to put a slice of island in a plate.

Recipe Notes

Keep on stiring the kheer continuously or otherwise it will stick to the pan. Stir the coconut mixture continuously till the sugar melts.

Ingredients For Pistachio Coconut kheer Island recipe

Methods
  • 1. Boil milk in a heavy bottom pan. Reduce to half till it thickens.
  • 2. Now mix kesar in 2 tbsp milk and add it to reduced milk. Keep on stiring the mixture continuously.
  • 3. Add ½ cup sugar and chopped almonds. Make kheer with the desired consistency. Switch off the flame and keep the kheer aside.
  • 4. In an another pan, saute coconut, grinded pistachios and remaining ½ cup sugar.
  • 5. Stir continuously till the sugar melts and mixture becomes thick.
  • 6. For assembling, first put badam kheer in the centre and border it with the pistachio coconut mixture resembling grasses.
  • 7. Pistachio coconut kheer island is ready. Enjoy!!
