Blinchiki Recipe

Blinchiki or Blini are Russian Crepes consider as tasty meal for breakfast, lunch or dinner. They are best served with jam, fruit, sour cream, or sweetened cottage cheese. I have made it's eggless version and served with custard cream.

Ingredients For Blinchiki Recipe

  • 1. For custard, boil milk in a saucepan and add sugar. Boil it till sugar dissolves.
  • 2. Make a paste from custard powder and 2 tbsp milk.
  • 3. Add this paste into boiled milk and mix well.
  • 4. Cook until custard thickened and switch off the heat.
  • 5. For pancake, In a medium bowl, whisk together milk, sugar and salt.
  • 6. Mix in flour a 1/4 cup at a time until batter is smooth and runny . Mix in the oil.
  • 7. Brush butter on a non-stick flat tava and heat over medium.
  • 8. Pour about 1/4 cup of batter into the center and immediately spread it with back of ladle.
  • 9. Cook until bubbles begin to form and bottom turns golden brown, about 1-2 minutes.
  • 10. Flip and cook another 30 seconds or until crepe is cooked.
  • 11. Remove to plate and gently brush top of crepe with butter.
  • 12. Spread custard cream and fold twice in triangular shape.
  • 13. Repeat with remaining batter.Serve immediately with fruit custard cream.
