It is an easy to prepare dish and has no limits to the number of ingredients you can use based on the availability and preference. I used carrots, beans, peppers, spring, onions and finished it off with some soy sauce, vinegar, sesame oil and fresh crushed pepper for flavour. . Considering the health benefits of barley it sure does add nutritional benefits to a dish it is utilized in. Barley is rich in both soluble and insoluble fiber which helps lower the bad cholesterol(LDL) in the blood, aids in digestion and has a low glycemic index which helps reduce blood sugar levels.
