Turn off the flame while adding bin the eggs to the pasta to make the creamy sauce.

Methods
  • 1. Boil the pasta in the stock for about 10-12 minutes until 80% cooked.
  • 2. At the same time heat a pan, add olive oil and the mushrooms and saute them until brown.
  • 3. When it sticks to the pan creating a fond, add the garlic and shallots and season with minimal salt and pepper.
  • 4. In a separate bowl add 2 egg yolks, grated parmigiano reggiano, pepper and spring onions. Mix it will and keep it aside. This is the sauce for the pasta.
  • 5. Now to the sautéing pan, add the drained pasta, cold butter and the pasta water (the stock) and emulsify them on a high flame. Once emulsified (should look like a nice thin buttery white sauce), turn off the flame and add the egg mixture and combine them together vigorously until a thick sauce.
