Gil E Firdous Recipe

A Hyderabadi delicacy usually prepared in weddings or special occasions. Combination of Sago Pearl's,Milk,Bottle Gourd and Basmati Rice slow cooked and thickened to relish. An absolute party favorite at my place.

Ingredients For Gil E Firdous Recipe

Methods
  • 1. Soak the basmati rice ,drain pat dry and grind it. Do not add any water.
  • 2. Soak the sabudana Pearl's overnight.
  • 3. Grate the Bottle Gourd/lauki and set aside.
  • 4. Heat ghee in a pot and slightly fry the slivered nuts and remove them.
  • 5. In the same ghee add the grated lauki &fry for 5 to 7 minutes.
  • 6. Add ½ of the milk & ½ the sugar into the lauki &let the lauki cook slowly.You can add green colour too .
  • 7. In another pot add the basmati rice,the sago pearls,remaining milk ,sugar,Cardamom powder and khoya
  • 8. Stir and Cook this mixture also till everything cools well.
  • 9. Make sure to cook both the mixtures on very slow flame and keep stirring.
  • 10. Now combine both the mixtures and let it simmer till it thickens.
  • 11. Let it cool and refrigerate the Gil E Firdous.
  • 12. Serve cold garnished with fried slivered Almonds and silver varak.
