Methods
  • 1. Whisk egg yolk,sugar, lemon zest together until pale and thick.
  • 2. In a sauce pan , bring milk to boil and pour over egg mixture whisking constantly.
  • 3. In a small jug, mix gelatin into boiling water until it dissolves.
  • 4. Remove custard from heat and stir in gelatin until combined.
  • 5. Add lemon juice in custard.
  • 6. Whisk egg white until firm peak stage and and fold gently into mixture.
  • 7. Add cream and gelatin into mixture.
  • 8. Pour into a jelly mould and freeze for an hour, serve cold.
