Kneading the dough till you get a window pane effect I. e stretching the dough till you can see your fingers on the other side. Pizza sauce need not have to be too complex, just basic flavours are fine can substitute chicken pepperoni.

Methods
  • 1. Combine plain flour salt, sugar and yeast.
  • 2. Add water and knead a smooth elastic dough.
  • 3. Keep covered in a warm place to ferment for 45 minutes.
  • 4. After 45 minutes knock the air out of the dough and make 200 gm dough balls.
  • 5. Keep dough balls in a tray and refrigerate till ready to make pizza.
  • 6. For the sauce
  • 7. blend tomatoes to a puree in a pressure cooker.
  • 8. place the puree add whole garlic lightly crushed, salt, sugar, oil and oregano.
  • 9. Pressure cook for 4-5 whistles. Let it cool down.
  • 10. Add the basil leaves and keep aside to use.
  • 11. Preheat oven to highest temperature you can alternatively use an electric tandoor too.
  • 12. Roll out the dough with your hands using plain flour making sure that you have a thick crust.
  • 13. Spread the prepared sauce grated mozzarella cheese and top with pepperoni slices.
  • 14. Bake in the oven till the crust is deep brown in color.
  • 15. Serve Hot
