MEXICAN STYLE BAKED BEANS ON CHAPATI CRISPS RECIPE

It's a good way to use up leftover chapatis or to give chapatis to kids in this way. Cut them into small round shapes or any shape, top them with baked beans and fresh veggie salsa, make them look colorful and appetizing and kids will love it and gorge on it.

Ingredients For MEXICAN STYLE BAKED BEANS ON CHAPATI CRISPS RECIPE

Methods
  • 1. Take the chapattis and cut into neat rounds with a cutter or you can even cut into triangles. Heat oil in a kadai and fry till golden and crisp.
  • 2. Keep aside to cool. For the baked beans, take 1 tbsp oil from the same kadai, and add onions and sauté till pink.
  • 3. Add the baked beans, salt and bring to a boil. Add coriander, check for seasoning and switch off the gas.
  • 4. For the salsa, mix the mangoes, capsicum, olive oil, lemon juice, salt, pepper and coriander and keep aside.
  • 5. For assembly, take the chapatti crisps, put a spoonful of baked beans on top and top with a spoon of mango salsa. Serve immediately.
