1.
Take out all purpose flour in a utensil and add 1/4 tsp salt to it and make a soft dough by adding water little by little. Apply some oil on your hands and knead the dough to make it smooth. Keep the kneaded dough covered for 15-20 minutes, so that the dough rises and sets.

make stuffing Wash the cabbage well, clean and grate it, and peel the carrot, wash it well and clean it and grate it.

Put 2-3 tsp oil in a pan and heat it, add grated ginger, green chilies and fry it for a while, turn off the gas and put the roasted spices in the grated vegetables. Also add 1/2 tsp salt and finely chopped coriander leaves and mix everything well. Stuffing is ready. The dough is set and ready, take some oil on your hand and mash the dough to make it smooth. Make small round balls from the dough and keep them covered so that they do not dry out.

Take a ball, make it round and wrap it in dry flour and roll it into round shape like a poori of 2.5 -3 inches diameter. (If the dough starts sticking to the wheel while rolling, then roll it again by applying dry flour). Roll the poori by giving pressure on the edges, do not make it thin from the middle. Place the rolled pooris in a plate and prepare all the pooris by rolling them in the same way. Place a poori on the palm and put 1 to one and a half spoons of stuffing in it, now hold the edge of the poori while folding it and stick it after folding it and stick it with the first one while folding it in the same way and lastly Closing it and sticking it (how to fold can be seen in the video).

Prepare all the momos in the same way. Now momos have to be cooked in steam. For this, either you will have to take a vessel for cooking momos, but if we do not have this pot for cooking momos, then fill water in such a vessel and heat it in which a sieve will come. Put 2 cups of water to boil in a vessel, grease the sieve with oil. Keep the momos in a sieve keeping them at a distance. When the water starts boiling, keep the sieve over the pot and cover it. To make fried momos, cook the momos halfway in steam for 5 minutes. After 5 minutes take out the momos and keep them to cool down. After the momos cool down a bit, take them out in a bowl. When momos are to be served, then fry hot momos hot.

to fry To fry momos, put oil in a pan and heat it. Put momos in medium hot oil. (Fry as many momos as comes in oil at a time). Fry the momos on medium-low flame until they turn golden brown. When momos are roasted in golden brown color all around, then keep them on a ladle and keep them on the pan for some time. So that the excess oil from the momos goes back to the pan. Take out the momos in a plate and keep them. Similarly prepare all the momos by frying them. (It takes 5-6 minutes to fry momos at once). Fried momos are ready. Serve and eat delicious hot fried momos with hot red chili chutney, tomato sauce or white sauce.
