Oat-Walnut-Grape Muffins Recipe

You may understand from the name itself that it is not typically an Indian Recipe. From various sources it has been found that the word ‘Muffin’ derives its name from a French Word ‘moufflet.’ The Origin is assumed to be in United Kingdom.

Ingredients For Oat-Walnut-Grape Muffins Recipe

Methods
  • 1. Grind the rolled oats to transform it into powder. Set aside for using it in the batter and handful to sprinkle over muffins.
  • 2. Grind one piece of walnut to transform it into powder. Set aside for later use in batter.
  • 3. Beat the sugar and butter in a large bowl till pale and creamy.
  • 4. In the same bowl add lemon zest.
  • 5. Add egg and beat.
  • 6. Mix powder oats and ground walnuts which were set aside earlier.
  • 7. In a dish sieve flour and baking powder together.
  • 8. Add flour and baking powder slowly into the main mixture.
  • 9. Add yoghurt.
  • 10. Beat continuously for a smooth mixture. The amount of yoghurt should be increased if the mixture is thick as there should be some air bubbles in the mixture but do not overmix the batter.
  • 11. Place the muffin liners in a muffin tray.
  • 12. Pour the mixture to the muffin liners. Do not overfill as it will overflow after the baking process.
  • 13. Toss the grapes into dry flour to avoid sinking of it in the batter.
  • 14. Cut the grapes from middle into two and place on the top of the muffins to be placed inside the oven.
  • 15. Press broken walnuts over the top of the mixture.
  • 16. Sprinkle over a handful of powder oats which were set aside earlier.
  • 17. Preheat oven 180-degree c.
  • 18. Bake it for 20 minutes at 180-degree c or till a fork/skewer/toothpick comes out clean at various points. Baking time differs in different ovens.
  • 19. Take out the muffins and transfer it to a separate dish for cooling.
  • 20. Once cooled enjoy it over with tea/coffee and chit chat.
