It is very healthy and delicious salad recipe using quinoa and three Indian famous beans (chickpeas,kidney beans and black eye beans) with lemon juice dressing. One can have it as a meal as it’s a complete nutrition packed salad.

Ingredients For Three beans quinoa salad Recipe

Methods
  • 1. Take overnight soaked beans and pressure cook until tender and soft. Do not overcook. As all three required different time for cooking, cook separately.
  • 2. Now take one cup quinoa, wash it 4-5 times and cook it with two cups of water till white tails appear to each granule.
  • 3. Now take a mixing bowl, add chopped onion and garlic, lemon juice, olive oil, black pepper powder, nutmeg powder and salt and mix well. Mix all the cooked beans and chill for half and hour.
  • 4. Now add cooked and cooled quinoa to the beans mixtures. serve chilled this healthy and nutritious quinoa beans salad. We can eat it as main meal.
