1. Cut aubergine and soak them in water or otherwise they will become black in colour.2. Let the water of the spinach evaporates completely.

Ingredients For Aubergine Spinach Recipe

Methods
  • 1. Wash the spinach. Chop them and keep aside.
  • 2. Cut the aubergine into pieces and soak them in water. Also cut potatoes into small pieces.
  • 3. Heat oil in a pan and fry the diced potatoes and aubergine separately and keep aside.
  • 4. In the same oil temper dry chilli and nigella seeds. Add the chopped spinach.
  • 5. Stir with turmeric powder and salt. Cover for few minutes.
  • 6. Then add fried potato and aubergine pieces. Stir and cover it for 5 more minutes.
  • 7. Add slitted green chillies. Let the water evaporates completely.
  • 8. Aubergine spinach is ready to be served.
