Besan Jaggery Burfi Recipe

Besan ki barfi is a traditional Indian sweet of a rich and decadent barfi made with gram flour, sugar and ghee. Bt I used jaggery instead of ghee specially made for bhog prashad on diwali puja and jaggery is also a healthy option For health conscious people.

1= In between The besan mixture will become like one whole lump of mass or you may see it getting thicker and granular. Continue to fry stirring very well. Scrape the mixture from the bottom when you stir.2= it may takes a little time to stir fry bt Its important to fry the besan very well or else you will get the raw taste of besan in the barfi.

Methods
  • 1. Take desi ghee in a heavy kadai and let it melt. Keep the flame to a low.
  • 2. then add besan in parts. Please use a heavy kadai, so that the besan roasts evenly.
  • 3. Also do not use a non stick pan as there is a lot of stirring involved.
  • 4. When the first portion of besan is added, mix it with the ghee.Then add the second part mix well
  • 5. Continue to stir the besan non stop on a low flame.
  • 6. Initially the ghee will be absorbed by the besan and you will see the mixture getting thicker.
  • 7. Continue to stir and fry the besan in ghee.
  • 8. After some time, you will see that the besan mixture starts to become molten and ghee will be released from the sides.
  • 9. Continue to stir and fry besan till it starts having a nice nutty aroma and changes to a golden color.
  • 10. Now finely chop the jaggery and add it to the gram flour and fry it.
  • 11. Do not fry too much, only mix it make sure there should be no lumps.
  • 12. Now add cardamom powder and all the dry fruits together with half sesame seeds
  • 13. Now transfer into greased plate and spread the remaining sesame seeds on top.
  • 14. cut in desire shape when it cool completely take out after cooling, it can be store for a week.
