Cabbage is a vegetable which is nutritionally rich, but with low carbohydrates. It is a great source of dietary fibre, vitamins & minerals. Using uncooked cabbage is a good option, especially for diabetics. Main concern usually is the pesticides & insecticides used while growing them. It is better to wash the cabbage in warm salt water before using in order to remove major chemicals from it. This was the suggestion that I got from a nutritionist.
