Pre heat oven to 190° C . line a rimmed baking sheet with parchment paper.
Brush bottom and sides of 2 ramekins lightly with 1 tsp of melted butter. Add 1 tbsp of sugar into the ramekins to coat the surface.
Melt the chocolate and put it in a mixing bowl. Keep it aside. Now take butter and melt it over medium heat sprinkle in some flour and whisk it until its incorporated into the butter and mixture thickens.
Reduce the heat to low and whisk the cold milk until the mixture becomes smooth and thick. Remove it from heat and transfer it into the melted chocolate bowl. Add a pinch of salt and mix.
Now add egg yolk into the mixture and mix it well.
Now whip the egg whites in a separate bowl. Add cream of tartar, sugar and mix it . whisk until its thick like a shaving cream holds soft peaks. 3-5 minutes.
Now add egg white in a chocolate mixture and mix it well. Now carefully put the mixture into the prepared ramekins and place it in a baking sheet.
Bake in preheat oven until souffle are puffed and risen above the rims. For about 12-15 minutes
After its done take it out and decorate it as you like and enjoy your souffle.
