Ingredients For Creamy Mushroom Soup Recipe

Methods
  • 1. Cook the chopped onions in about 1 in butter until soft but not browned, adding garlic just before onions are done.
  • 2. Prepare the mushrooms by removing the stems from the caps.
  • 3. Simmer for about 10 minutes. After 10 mins, strain the liquid place in a blender and bring to a pulp.Return the soup to the saucepan.
  • 4. When almost ready to serve, with the cream in a mixing bowl.Add a little of the soup mixture to the cream mixture, mixing it in well.
  • 5. Add the rest of the egg and cream mixture. cook very slowly for about 3 minutes.Pour the soup into either a soup terrine or individual soup dishes.
  • 6. Garnish with grilled mushrooms or fresh coriander.
