Ingredients For Dudh Lau Bori Jhol (Bengali Style Bottle Gourd curry with milk and sundried lentil dumplings)

Methods
  • 1. First wash and cut the bottle gourd into dices. Meanwhile deep fry the homemade bori for 30sec on low-medium flame and keep aside.
  • 2. Now take a heavy bottom kadai. Add 1tbsp of mustard oil. Let it heat up. Add black cumin seeds. Let it splutter. Add the diced of bottle gourd into it.
  • 3. Add salt and stir properly for 2-3 minutes on low flame. Now put on a lid and let it slow cook on flame for about 10-12mintues tilt he bottle gourd gets soft. Keep on stirring at intervals orelse it might burn.
  • 4. After 10mins open the lid add 1 cup of hot water and 2green chillies slited. Give a good stir. Now add the already fried homemade boris and give one stir. Put the lid again and let it the bottl gourd get cooked.
  • 5. Once the bottle gourd get cooked add sugar and give a stir. Then add the milk and the pich of tumeric powder
  • 6. Now let the entire curry boil on high flame for 2-3 minutes. Make sure that you keep ons stirring at this stage.
  • 7. Switch of the flame and finish of with freshly chopped coriander leaves.
  • 8. Put on the lid let it rest for a while. Then serve at room temperature with rice.
