Ingredients For GHEEYAR RECIPE

Methods
  • 1. Take a bowl add all purpose flour, curd and ghee. Mix it. Now gradually add water and make thin , smooth, lump free batter.
  • 2. Cover this batter with lid. Keep it in a warm place for fermentation for 12-15 hours.
  • 3. After fermentation add rest of the flour and colour in it. Mix it well. Add water if needed. We need thick but flowing batter.
  • 4. Take a sauce pan add sugar , water and cardamom powder. Make a sticky sugar syrup without any string.
  • 5. Heat oil in a flat wok. Put a ring in wok. Because of this ring , gheeyar will take proper shape during frying.
  • 6. Fill some batter in a piping bag. In circular motion pour the batter in ring. On low medium heat fry it. After some time gheeyar will leave the ring. Take out the ring . Fry it till it becomes crispy from both the sides.
  • 7. Put the gheeyar into the sugar syrup. Flip it after 1-2 minutes. Don’t leave it in sugar syrup for more than 4-5 minutes, it will become soggy.
  • 8. Transfer it in serving plate. Garnish it with chopped dry fruits and rose petals.
