Layali Lubnan / Semolina Lebanese Pudding Recipe

This Lebanese pudding is a very popular dessert from the Middle East. It is milk-based semolina (Rava/ suji) pudding that is topped with milk pudding decorated with pistachios. Recipe Notes

Orange rinds gives nice aroma to the pudding so don't skip it. Keep in the fridge before serving. you can use maple syrup or coconut syrup too.

Methods
  • 1. Dry roast sooji in nonstick pan till it turn little pinkish.
  • 2. Add milk gradually and stir the mixture. Add sugar and keep stirring.
  • 3. After 5 to 7 minutes when sugar dissolves add chopped cranberries and orange rind into the mixture and mix well.
  • 4. When mixture turns little thick add rose water And keep stirring for more 5 minutes.
  • 5. When it turns semi thick switch off the flame and transfer this mixture into a greased pan.
  • 6. When it comes on room temperature keep it in fridge to set.
  • 7. Now for cream take a bowl add chilled coconut cream . Use only cream from tin add whipping cream and coconut powder and whip till you get stiff peaks .
  • 8. Now take out tin from fridge and spread cream over the sooji mixture.
  • 9. Make some beautiful design on cream by using crushed pista or sprinkle some pistachios.
  • 10. Now keep in the fridge before serving.
  • 11. Serve chilled pudding with some chopped rose petals , pistachios, cranberries and drizzle some hazelnut syrup.
