This is a traditional recipe of Rajasthan which is traditionally made on palash tree leaves and cooked on kande ( upale) But now we can make it in a gas Tandoor.

Take a bowl add maize flour and salt and mix it then add water and make a tight dough. Now preheat the gas tandoor. Take a small ball from dough and flatten it by your palm like thick poori as shown in picture and keep it aside. Do ready all panki like this and place all pankis in gas tandoor.

Cook them in low to medium flame from both sides like baati. It takes 25-30 minutes after it switch off the flame. Take a bowl add ghee and dip these panki one by one in it and then place it in a case roll and cover it or serve it hot with Urad Dal and cardamom milk .
