1.
Wash and cook raw brown rice with 2 cups water. Spread on a plate to let it cool down.

In a kadai heat oil. Add in mustard seeds and let it splutter. Add chana dal, urad dal, peanuts and fry until crunchy. Remove to a bowl and set aside. This is done to keep the dal and peanut crunchy.

In to the same pan add sliced onion, slit green chili, curry leaves and fry until onions are translucent. Add in grated raw mango, hing and saute until mango shrinks and is cooked. Add turmeric powder and mix.

Add cooked and cooled rice along with salt and mix gently with out breaking the grains. Add in grated coconut, fried nuts and coriander leaves. Mix well.Raw Mango Rice is ready to serve hot .
