1.
First we will make chena. Boil 1 liter milk in a pan, once the milk comes to a boil, pour lemon juice and stir well, stir until the milk curdles.

Drain the curdled milk on a cloth-lined over a colander, rinse off the curdled milk with fresh water to remove sourness from lemon juice, squeeze the water completely. Chena is ready.

Soak the moong dal in water for 2 hours. Then make a smooth paste in the mixture grinder.

In a heavy bottom pan, add 1 liter milk, boil the milk and then lower the flame, stir continuously till milk reduces to half the volume
5.
In another pan add ghee, fry the dal paste and chana, after frying add the dal paste and chena in milk and add milkmaid, keep stirring, till it gets perfect consistency and little thickened, payesh is ready, decorate with chopped nuts and serve.
