Oil-Free Savory Zucchini Cheese Muffins Recipe

These Savory Muffins are pretty healthy & completely Oil-Free. Can be served as breakfast or as snack at Tea/Coffee Time. Good for traveling too. I used Orange Bell Pepper here. You may use Red or Yellow as well. Yields: 7-8 Standard size muffins.

Ingredients For Oil-Free Savory Zucchini Cheese Muffins Recipe

Methods
  • 1. Heat the oven at 200°C/400°F.
  • 2. Combine the All-purpose flour, Baking Powder, Salt, Pepper, Garlic Powder & Red Chili Flakes in a small bowl.
  • 3. Whisk the eggs in a large mixing bowl.
  • 4. Add the grated Zucchini, diced Orange/Red Bell Pepper followed by the grated Cheese. Mix well with a spatula.
  • 5. Add half of the All-Purpose flour mixture. Mix until combined using a spatula.
  • 6. Add the remaining half of the Flour. Mix until combined well.
  • 7. Line the cavities of the muffin pan with parchment paper liners.
  • 8. Spoon the zucchini mixture into the prepared muffin pan until almost full.
  • 9. Bake for 25-30 minutes. A toothpick inserted in the center should come out clean.
  • 10. If not, then keep the muffin pan back into the switched off oven for 5 minutes.
  • 11. Enjoy warm! Bon Appètit!
