Methods
  • 1. Preheat oven to 180C / 350F, and skin your oranges (slice the top and bottom off each orange so it stands level on a cutting board. With a sharp knife, cut off the rind and pith from top to bottom, exposing the orange’s flesh, working all the way around the fruit until all the skin is cut off
  • 2. Slice width-wise into thin rounds, and set aside.Whisk the oil and sugar together to combine. Add the orange zest, orange juice, eggs and vanilla, and beat well. Once incorporated, add the milk and stir just to combine. Sift in the flour, baking powder, mixed spice and salt,
  • 3. and mix with a wooden spoon until totally incorporated.Spray a 12-capacity muffin tin.
  • 4. Combine the butter and brown sugar to make a paste and divide the mixture evenly among the 12 cups, rubbing evenly into each cup to cover the bottom. Place one orange slice on top of the butter mix in each cup — each orange slice should be approx the same width as the base of the muffin cup.
  • 5. Pour the batter top each orange slice to 3/4 full. Bake 20-25 minutes or until a toothpick just comes out clean. Run a knife or wooden skewer along the edges of each cake and invert immediately onto a cooling rack. Best enjoyed with a cup of tea and good company.
