Rabri Recipe

Rabri is thickened sweetened milk having layers of malai or cream in it. it's flavoured with cardamoms, saffron with the addition of dry fruits like almonds and pistachios. This version of rabri is also called as Lachha rabri in hindi.

cooking milk till half of its volume to make rabdi recipe. You can also just thicken and scrape the milk solids from the sides like I have done for shahi tukda rabdi. but in this case you won't get the layers of cream or malai in the rabri. But both versions taste good.

Methods
  • 1. In wide pan add full fat milk,sugar,saffron strands and cardamom powder.
  • 2. Let the milk boil on a high flame.
  • 3. Once it boils bring the flame to medium and pull the creamy layers aside.
  • 4. Boil milk till it comes down to one third quantity.
  • 5. Add corn flour in milk and give it a mix then add it to the saffron milk.
  • 6. Let it cool down completely.
  • 7. Add 1 tsp of milk masala powder and stir it.
  • 8. Pour it into a bowl and scrape off the cream from the edges.
  • 9. Add the cream into the milk and lightly stir it.
  • 10. Chill it completely and garnish it with roasted almond flakes.
  • 11. Rabri is ready to be served.
