BABYCORN KOLIWADA RECIPE

This recipe is inspired by the famous Prawns Koliwada, where prawns are coated with a besan batter and fried. Here I have used Babycorn instead and made it vegetarian. It is crispy and tasty and makes an ideal snack.

Recipe Notes

Oil should be hot before frying the babycorn. Test the oil by putting a small cube of bread in hot oil, if it sizzles, it means the oil is ready for frying.

Methods
  • 1. Cut the babycorn lengthwise into 2. Sprinkle salt, kashmiri chilli powder, ginger garlic paste and coriander powder and mix well.
  • 2. Leave the babycorn marinated for 15-20 minutes. Add besan, rice flour, curd, kashmiri chilli powder and lemon juice to the babycorn and mix well.
  • 3. Heat 2 cups oil in a kadai and deep fry these babycorn in them until crispy.
  • 4. Serve sprinkled with chaat masala as a snack.
