1.
Pre-heat the oven at 160 degree Celsius for 10 minutes.

Beat egg and sugar using hand mixer in a bowl till light and fluffy.

Add curd, vanilla essence and oil then beat again to mix all ingredients.

Sift all dry ingredients and add it to the egg mixture. Fold it lightly.
5.
Grease muffin moulds and pour the batter in moulds till they are three fourth filled.
6.
Bake for 20 minutes at 160 degree Celsius in the preheated oven.
7.
Meanwhile take a saucepan add sugar and few drops of water on a medium flame. Cook till it gets liquid and golden in colour. The caramel sauce is ready.
8.
Take muffins from the oven and let it cool on the cooling rack. Now dip the top of the muffin in the hot caramel sauce.

I tried this recipe, and the cupcakes were quite spongy. Moreover, topping it with caramel just augmented the flavour.
