These are healthy and delicious cookies and made without eggs. It's soo crunchy with the flavours of coconut inside out. Super easy to make and super yummy to taste.

  • 1. Instead of half all-purpose flour and half whole wheat flour you may use only all-purpose flour or only wheat flour.You can use Jaggery powder instead of sugar powder.
  • 2. in a mixing bowl, add sugar or jaggery powder and ghee or butter. Make sure it's on room temperature neither melted nor freezed. Beat these two until light and fluffy and pale in colour. It almost doubles in size and looks like a cream. It takes 10-15 minutes with and electric beater to reach this point. Now add all-purpose and whole wheat flour and seive it before adding. Then add dessicated coconut and baking powder to the mixture and mix everything really well.
  • 3. Add 1 tbsp milk at a time or as required. Texture of the dough should be crumbly. It should be on a harder side then Knead the dough very lightly and Keep aside to rest for 15 minutes. This is a must do step don't skip it. If you find your dough sticky then keep it in the refrigerator for 30 minutes then start making the cookies. Meanwhile preheat the oven at 180°C for 15 minutes. Line the baking tray with butter paper or parchment paper. Now divide the dough into 12 equal parts.Eggless Coconut Cookies recipe step 3 photoMake sure to divide them equally as it's very important for even baking. Now take a portion roll them between your palms and make a ball shape without cracks then flatten it between your palms to give a shape of the cookie and then roll it in the desiccated coconut. Now put almonds or cashews in the centre of the cookie and press it slightly. Like so make all the cookies then keep them on the lined baking tray. Place the cookies with a gap so that it didn't overlap while baking.
  • 4. Now bake them in a preheated oven bake at 180°C for 15-20 minutes or till the sides turn brown. It will be gooey in the middle at first but don't overbake them it will be will become perfect once it will cools down. After baking transfer the cookies to a cooling rack and allow them to cool down completely. You can store these cookies for 8-10 days on room temprature in an airtight container.
