Recipe Notes

Do not over steam the RAVIOLI since they may become little hard. You can even cut them up with spiral cutters to give them beautiful look.

Ingredients For DHOKLA FLAVOUR RAVIOLI RECIPE

Methods
  • 1. Mix in maida , gram flour, salt with 2 tbsp of oil and make a soft dough with needed water. Leave it aside for approx 20- 25 minutes.
  • 2. Meanwhile prepare your ravioli filling by gently mixing in cottage cheese with green chilli and ginger adjusting the salt and pepper up to your taste. You can add 1 tbsp of sugar too to it of you wish to taste them a bit sweet as gujarati dishes are fond of sweetness.
  • 3. Adding sugar is optional.
  • 4. Now make small rough balls from the mixture, cover them with a damp cloth and leave aside.
  • 5. Roll the dough into thin large sheets on the working platform for easy handling. Now place the filling balls leaving 2 inch gap from each other covering the whole ravioli sheet.
  • 6. Now make other thin sheet of approx the same size and cover the first one. With a cutting roller cut them into squares having the filling in the centre.
  • 7. Repeat the same with the left over dough. Keep the prepared ravioli covered with a damp cloth for them to not get dry.
  • 8. Now in a steamer steam them carefully seeing that they don't stick to each other for approx 15 - 18 minutes.
  • 9. While they are getting steamed up, prepare its seasoning. Heat 3 tbsp oil in a pan, add mustard seeds, curry leaves and add 3 tbsp water. Give a quick boil n of the flame.
  • 10. Let it cool to room temperature.
  • 11. Take out the steamed ravioli on your serving plate and drizzle some fresh grated coconut. Spread the prepared seasoning and serve immediately.
