Methods
  • 1. Boil milk in a deep and heavy bottom pan. Simmer over low flame until reduced to half, continue stirring to avoid sticking.
  • 2. Add sugar cook it until fully dissolved.
  • 3. Now add 3/4 of 250 gm mawa to the milk, cook it on slow flame for 5 to 7 minutes.
  • 4. Add rose essence and food color mix well. Now add sev and mix it well, cook it very slowly for 2 to 3 minutes.
  • 5. Now add left mawa and mix well. Cook for another 2 minutes.
  • 6. At last add ghee and cardamom powder mix slowly until leaves the side of pan switch of the gas.
  • 7. Let it cool completely. Pour the mix in a square try brushed with ghee..spread it evenly.
  • 8. Cover top with silver varak and then with chopped nuts.
  • 9. Keep it in a refrigerator of 2 hours and then cut into square shape pieces. our sev burfi is ready to serve.
