Jadariyu is prepared from the flour of green roasted wheat with ghee and jaggery .this fire roasted wheat is also known as ponk. It is forgotten cuisine of Saurashtra area of Gujarat. It is high protein rich sweet which 8s prepared with very few ingredients.

Ingredients For Jadariyu Recipe

Methods
  • 1. Take a parat or deep thali and add flour to it. Now by adding milk gradually mix with fingers.
  • 2. Now press the flour and cover with another plate.keep for rest for atleast 20-25 minutes.
  • 3. After that time flour will soak milk and it will swell.
  • 4. Now it's time to make jaggery syrup to make syrup take nonstick pan add ghee in it at medium flame.
  • 5. When ghee melts add jaggery and mix with spatula.when jaggery completely mix with ghee jaggery syrup is ready.
  • 6. Now add flour and cardamom powder to it and mix well.
  • 7. Turn the flame off and transfer this mixture in a plate. Now allow to cool.
  • 8. Garnish with sliced almond and pistachio and cut into square pieces. that's it. Our Jadariyu is ready to serve
