Methods
  • 1. To prepare the crust of the cake, first grind the bread crumbs in a grinder. Mix it with melted butter and 2 tbsp sugar.
  • 2. Take a baking tray and press the prepared crust mixture in it. Bake it in a preheated oven at 180°C for 15 minutes. Keep it aside.
  • 3. Now for making the cheese cake, boil the milk in medium high flame. Squeeze the lemon juice into the milk. Let the milk curdle. Stir it slowly.
  • 4. Take a muslin cloth, line up in a pan and pour the curdled milk on it. Squeeze it by gathering together the four corners. Hang it for 30 minutes so that all the water drains out.
  • 5. Knead it nicely till the mixture becomes smooth. Now add condensed milk, baking soda, gondhoraj lemon juice and gondhoraj lemon zest to the paneer mixture.
  • 6. Spread this mixture over the crust and bake it in the preheated oven at 200°C for 15 to 20 minutes. Cheese cake is ready.
  • 7. Now to make caramel sauce, take a pan and heat sugar until caramelized.
  • 8. Make two heart shapes with a baking tortilla in heart shape at 180°C for 8 to 10 minutes.
  • 9. Now to assemble, cut the cheesecake into a heart shape and put it inside a baked tortilla heart. Brush caramel sauce in the plate and place the cheesecake heart.
  • 10. Top it with the caramel sauce. Garnish with the gondhoraj lemon wedges, grated dark chocolate and another heart shaped tortilla in red colour. If you wish you can colour the tortilla hearts with food colour.
  • 11. Jashn e Holi is ready in its colourful form. Enjoy!!
