1.
first roast some cashews & set them aside.Heat oil in a pan & add chopped potatoes & carrots to it.Shallow fry them for a while till it became golden brown.

Then add cauliflower florets & chopped French beans to the pan.Cook for a couple more minutes.

Add green peas & chopped capsicum.Fry all the vegetables & set them aside.

Heat oil in the pan.Add cumin seeds & fry them till they start to splutter.Now add green chillies & tomatoes.

Add tomato gravy to a grinder along with roasted cashews.Grind the mixture to a smooth puree & add it back to the pan.
6.
Add red chilli powder,Tumeric powder,Coriander powder,garam Masala & salt to the gravy.Roast the gravy.Add 2 tablespoons cream.
7.
Add 1 cup water to the gravy & bring mixture to a boil.Add fried vegetables & mix all to the gravy.Cook for 4 mins.
8.
Sprinkle chopped corianderleaves & serve hot with rice.
