It's a winter special dessert because nolen gur (liquid date palm jaggery) only available in winter season.The flavour and taste of this jaggery is just awesome.So please if you can't collect this jaggery then don't try this with any other jaggery.

Methods
  • 1. Boil milk first.When it will start to leave bubble switch off the flame.
  • 2. Make it cool for 5 minutes in room temperature.Then add vinegar to curdle it.
  • 3. Wash the paneer under cold water to avoid the sour taste of vinegar.
  • 4. Drain out excess water.Then take a muslin cloth, tie up the paneer in it and hang it for at least 30 minutes.
  • 5. Make the paneer dry.But mind it don't make it too much dry.
  • 6. Mix semolina and mash the paneer well with the help of your hand.You can grind it also for just 1 or 2 second.
  • 7. Take 3 tsp paneer from dough and mix red food colour in it.
  • 8. Take some portion from white dough ,put the red rasgulla(any shape you can make) in it and wrap it well.
  • 9. Boil syrup with jaggery and water.Add cardamom .
  • 10. When the syrup will start to leave bubble,add rasgulla in it.
  • 11. Boil it in high flame for 10 minutes with lid.Then open the lid.Size will double.
  • 12. Boil it another 20 to 22 minutes on medium flame without lid.
  • 13. After that switch off the flame and shift the rasgullas in another bowl.
  • 14. Make it cool and keep it in fridge.
