Paturi of Pumpkin Leaves Recipe

This is a very easy and tasty recipe of my Mom. The paste of coconut, poppy seeds mustard seeds,garlic cloves wrapped in pumpkin leaves . In this recipe the pumpkin leaves give a nice aroma and it also be eaten. Enjoy it with some steamed rice.

Ingredients For Paturi of Pumpkin Leaves Recipe

Methods
  • 1. In a grinder add poppy seed, mustered seeds, garlic cloves, green chillies, salt and some water and now grind all these.
  • 2. Now add grated coconut and 1 tbsp water in the grinder and make a semi smooth paste. Mix turmeric powder and red chilli powder on the paste.
  • 3. Boil some water and salt in a saucepan and deep each pumpkin leaves into it just for a few second and keep aside.
  • 4. Grease the darker side of the pumpkin leaves with mustard oil.
  • 5. Take 2 pumpkin leaves keep the grease side up. Now place 2 tbsp mustard-coconut paste in the middle and fold the leaves nicely
  • 6. Grease a non stick frying pan with mustard oil.
  • 7. Place the percel or Paturi on the frying pan the folded side should be lower.
  • 8. Cook for 20 minutes on low flame. Flip the parcel gently in between and add some mustard oil in the pan after first 10 minutes of cooking let the parcel turn dark green in colour.
  • 9. Paturi should be done about 20 minutes as soon as you smell the cooked pumpkin leaves fragrance.
  • 10. Sear the paturi for an additional 30 second for a crispy leafy exterior.
  • 11. Served hot with steamed rice.
