Methods

How to make Pecan star bread Recipe

1. Warm milk & 65g butter in micro/pan till butter just melted.
2. Place in a food mixer fitted with a dough hook attachment. Add in yeast and sugar -stir and leave to “bloom” for 5 to 10 minutes
3. Add in oil,eggs & vanilla . Mix then add all the flours & salt . Mix together for 3 to 5 minutes till dough is formed - will be a bit sticky at this stage . Using oiled hands knead for a 5 to 10 minutes,until a smooth dough is formed .
4. Place in a large bowl cover with cling film & leave in a warm place for an hour or till double in volume.
5. Knead a little and divide dough into 4 portions . Roll each portion out into a 30cm circle.
6. Brush 1st circle with melted butter
7. add a generous sprinkling of the date/nut/cinnamon filling
8. cover with the 2nd circle and repeat the process. Repeat for the 3rd layer .
9. Cover with the final circle . Place a small bowl in centre & cut into equal wedges
10. I cut into 24 wedges but 16 should be fine.
11. Using two hands pick up two adjacent strips and twist them away from each other twice so that the top side is facing up again. Repeat so that you end up with 12 or 8 pairs of strips.
12. Pinch tips together to create a star-like shape with 8 or 12 points.
13. Transfer onto parchment lined baking sheet. Cover & let it rise until it becomes puffy around 20 minutes.. Meanwhile preheat oven to 180C
14. Brush the star with eggwash Bake for 20 to 25 minutes until golden with dark brown date/cinnamon streaks.
15. Serve with a dusting of icing sugar warm or at room temperature.
16. Place filling ingredients medjoul dates, pecan nuts ,Brown sugar, cocoa powder, Cinnamon powder, a food processor and process till mixture resembles coarse breadcrumbs. Use for star bread as above .
