Wash quinoa, in a pan, add quinoa, water, oil, salt and turmeric. Bring to a boil, cover and reduce the flame to low. Cook until quinoa is tender and water is absorbed. This should take about 10 to 15 minutes, Fluff with a fork gently to slightly separate.

Boil the soya chunks with salt for 5 minutes, drain water and keep aside.

Heat the oil in pan, add cumin seeds, add all the vegetables and saute them, add salt and then add soya chunks, then add turmeric powder, garam masala powder and saute and let it cook over medium flame until vegetables are cooked properly.

Then add Quinoa and mix properly and cook for another 5 minutes, lastly add coriander leaves.
