Ingredients For Amaranth & Carrot Soup Recipe

Methods
  • 1. Soak amaranth seeds for 20-25 mins. Heat oil in a heavy bottom vessel on medium vessel. Add garlic and saute till it changes colour.
  • 2. Add onion and cook on low flame till it turns transparent.
  • 3. Add carrot and corn. Saute for 2-3 mins on medium flame.
  • 4. Add cumin powder, red chilli powder and salt. Saute for 30 seconds.
  • 5. Add water and coconut milk. Bring it to boil and let it simmer for 8-10 minutes.
  • 6. Remove from the flame and garnish with pumpkin seeds.
