Balushahi Recipe

  • 1. For syrup - Add water, sugar and cardamom in a saucepan and boil it on medium flame. Let it boil until the syrup reduces to about one thread on a candy thermometer.
  • 2. Mix flour, baking soda and baking powder in a bowl.
  • 3. Add the butter mixture with your fingers, the mixture should be crumbly. Gradually add curd while kneading soft dough as required. Do not knead the dough
  • 4. Cover the dough and keep it aside for about half an hour.Take the dough and knead it enough to hold together.Divide the dough into 12 equal parts
  • 5. Make balls of the dough, the balls will not be very smooth and will have cracks all over; Make a deep dent in the center of the balls.Heat oil in a flat fry pan on low flame
  • 6. There should be about 1½ inches of oil in the frying pan. To check whether the oil is ready or not, drop a little flour into the oil. If the dough floats the oil is too hot, it should crackle slightly
  • 7. It should take about 2 minutes for Balushahi to arrive. Wait for 3-4 more minutes before turning the Balushahi, the Balushahi should be light brown from below. Fry the Balushahi until golden on both sides; Do not turn more than three times. This should take about 10 minutes. Balushahi will look very flaky, if you fry it on high flame then it will not get cooked from inside.
  • 8. Take them out on a paper towel so that it can absorb the excess ghee.Dip the Balushahi in syrup from all sides and take it out. Don't leave them in syrup.The mouth-watering Balushahi is ready and looks great to read. Garnish them with pistachios.
