Bhapa Doi or Steamed Mango Yogurt is a Bengali traditional steamed sweetened yogurt dessert. Steamed Mango Yogurt is just the same of flavored with mango pulp . A fusion twist to the traditional bhapa doi. It is easy to prepare with minimal ingredients. It is a luscious ,creamy, mouth watering and delicious dessert.

Recipe Notes

While steaming, there should be enough water to cover the bottom half of the mould. Do not bring the water to a boil. Use low heat. Do not overcook. If you do not have thick curds, take 400gms of curds in a sieve and set aside so that the extra liquids drain. Then use 200 gms of the thick curd.

Methods
  • 1. In a blender, add the curd, mango pulp, sugar, condensed milk and blend it until smooth and everything is blended well together. Pour the whisked mixture into the silicon moulds or greased aluminium moulds and cover the moulds with foil.
  • 2. Take a steaming pot and add water and bring to boil. Once the water comes to a boil, Then place the filled moulds over strainer ,that is kept on steel ring to give it height to avoid water .put a lid on and steam for 15-18 minutes or until it is set,on low heat.
  • 3. When almost done, pierce with a knife/wooden skewer to check if done. The knife should come clean. Do not overcook as the pudding will curdle.
  • 4. Cool the moulds to room temperature and then keep them to chill in the refrigerator. When well chilled, demould on a plate, cut and serve chilled garnished with Melon seeds,glazed cherries and pistachios.
