Quiche is a French tart consisting of pastry crust filled with savoury custard and pieces of cheese, meat, or vegetables or some combination of all three.

Preheat the oven to 180 degrees. Spray a quiche moulds with cooking spray and set aside.

In a large pan, heat the olive oil. Then add the garlic, green chillies, broccoli, and onion. Cooking, stirring intermittently over medium heat until the vegetables are soft, about eight minutes. And also add some thyme in it.

To make a white sauce In a small saucepan over medium heat, melt butter. Add flour and stir until the butter and flour are well combined. Pour in milk, stirring constantly as it thickens. And mix above vegetables together and keep aside.

To make a quiche crust rub the butter in to the flour with your fingertips and mix well also add salt and sugar together. Gradually add ice cold water and knead well to make a stiff dough and refrigerate for at least 15 minutes.

Knead the dough again and divide into 10 equal portions roll out a portion of the dough into a 10 mm diameter circle, place the circle into a 75 mm diameter tart moulds and press the circle gently around the sides of the tart moulds.

Prick all over the tarts with the help of fork. Arrange the tarts on baking tray and bake in a preheated oven on 200 c for approx 10 to 15 minutes.

Then demould the tarts from tart shells and pour the white sauce mixture into the tarts and add the grated cheese on top and again bake for another 10 minutes. And then arrange them in a serving plate and serve hot.
