Ingredients For Instant Hot Piping Crispy Jalebi With Rabdi

Methods
  • 1. Mix maida, rice flour, curd, yellow colour and make a semi thick batter with water. The consistency of the batter should not be too flowy.
  • 2. Rest this jalebi batter for 15 minutes.
  • 3. Meanwhile, in a heavy vessel boil milk . Add cardamom powder and saffron strand. Keep stirring it at low flame till milk reduces to half.
  • 4. Add 2 spoons of sugar and finely chopped nuts.
  • 5. Mix well and put off the flame. Rabdi is ready.
  • 6. Heat ghee in a wok.
  • 7. Before making jalebi, add a pinch of baking soda in the batter.
  • 8. Pour this batter in a plastic sauce bottle.
  • 9. Press the bottle and make round whirls of the batter like jalebi in the hot ghee. Keep the flame at low medium.
  • 10. Deep fry till both the sides turn golden brown. Jalebis are ready.
  • 11. Mix 1 cup sugat and 1/2 cup water . Cook it on medium flame till sugar dissolves completely and gains 1 thread consistency.
  • 12. Put off the flame. Add hot jalebis in warm sugar syrup and keep it for 2-3 minutes.
  • 13. Serve hot , crispy jalebi with rabdi . Garnish with almond flakes.
